A gifted athlete, Erin was an All-State volleyball player and continued her passion for the sport at St.Louis University. She later served as an assistant coach at Creighton University and coached numerous club teams. She loved sharing her knowledge and love of volleyball with generations of athletes.

Erin was a devoted sports fan, especially of North Carolina Tarheel basketball and St.Louis Cardinals baseball. She loved ladybugs, all things French, Grumpy dwarf, 101 Dalmatians and Hallmark movies.
